Bean and Cheese Quesadillas Recipe

"Easy and Yummy! Veggies, beans, and cheese sandwiched in tortillas. You could add or substitute any vegetables that you'd like. Serve with sour cream and rice."

Ingredients:
4 tablespoons olive oil
1 onion, finely diced
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 green bell pepper, chopped
2 tomatoes, chopped
1/2 (10 ounce) package frozen corn
12 (12 inch) flour tortillas
1 cup shredded Cheddar cheese

Directions:
1. In a large skillet, saute 1 tablespoon oil, onions and garlic until soft. Mix in beans, bell peppers, tomatoes and corn; cook until heated through.

2. Place a tortilla on a plate or flat surface, sprinkle some cheese over the tortilla. Spoon some of the bean and vegetable mixture over the cheese. Top with another tortilla. Repeat until all of the tortillas are used.

3. Heat oil in a large skillet over medium-high heat. Place quesadillas in the skillet and heat and flip until both sides are browned.
