Gazpacho Soup Recipe

"You'll love this tangy delicious, raw soup!"

Ingredients:
4 c tomato, chopped
1 2/3 c cucumber, chopped
1/4 c olive oil
1/3 c lemon juice
1/2 t salt
1/2 jalapeno, minced
1 med garlic clove
1/2 c bell pepper, finely diced
1/4 c onion, chopped
1/2 c parsley chopped

Directions:
Blend 2 c of the tomatoes, 1 c of the cucumbers, olive oil, lemon juice, salt, jalapeno and garlic. Place in bowl. Add the remaining tomatoes and cucumbers, bell pepper, onion and parsley.
