Ingredients:
8 ounces dried penne or pasta of choice
12 sun-dried tomato halves
1/4 cup fresh basil leaves
2 plum tomatoes, coarsely chopped
2-3 garlic cloves
1-2 roasted red peppers, chopped
1/4-1/2 cup pine nuts
salt to taste
1/2 teaspoon onion powder
1/2 teaspoon chicken-style seasoning
1/8 cup olive oil

Directions:
1- Bring water for pasta to boil over high heat; stir in pasta and cook just until tender, about 15 minutes. Drain well.

2- Rehydrate sun-dried tomato halves by soaking in boiling water for 2 minutes.

3- In blender or food processor, place basil leaves and process until finely chopped, scraping sides as needed. Add rehydrated sun-dried tomatoes, plum tomatoes, garlic cloves, roasted red peppers, pine nuts, salt, onion powder, and chicken-style seasoning. While machine is running, pour in olive oil. Thin with 2 to 4 tablespoons of hot water, if needed, to toss with pasta.

4- Toss pesto with hot pasta and serve.
