"Researchers are discovering the multiple nutritional benefits of blueberries. According to scientists, consuming this fruit may hlp protect against as aging-related decline in memory and coordination. Blueberries have the ability to quench free radicals, and may help the brain stay younger, longer. A three-quarter cup serving of blueberries also packs fiber, calcium, potassium and phosphorus."
Ingredients:
1 cup self-rising flour
1/2 cup toasted wheat germ
1/2 cup bran
1/4 cup brown sugar
1/4 cup granulated sugar (may substitute maple syrup)
egg replacer to equal 2 eggs
1 cup soymilk
2 tablespoons natural applesauce
1 pint blueberries, rinsed
Directions:
Preheat oven to 400. Mix together flour, wheat germ, and bran in a bowl. Combine sugar, syrup, egg replacer, soymilk and applesauce in a separate bowl. Toss blueberries with flour mixture. Add wet mixture into dry and stir until just combined. Distribute batter evenly among 12 muffin cups that have been lined or
greased. Bake for about 30 minutes or until golden brown.
