Vegan Penne Primavera with Alfredo Sauce Recipe

"This is a delicious vegan version of a great dish!"

Ingredients:
Vegan Penne Primavera w/ Alfredo Sauce
2 boxes of DeBoles Rice penne
8 oz. of original rice dream
2 tablespoon of Kamut? flour
3 tablespoon of vegan parmesan cheese(soyimage)
2 oz. organic olive oil
3/4 teaspoon sea salt
1/2 teaspoon black pepper
1 red bell pepper
12 broccoli florets
2 carrots
1/2 teaspoon of crushed red pepper

Directions:
Boil 4 quarts of water w/ pinch of salt & oil(optional) then add pasta and cook aprox. 10 min. until tender. Rinse in cold water and set aside.

Sauce:
Heat pan add oil then flour stir flour until slightly biege then while stirring add rice milk/ parmesan cheese, let thicken while stirring( if too thick add a little water) add salt and pepper to taste, take off heat.

Veggies:
Julienne veggies then lightly saute' in olive oil. Immeadiatly re-heat sauce and separate pasta into bowls pour sauce over pasta and top with sauted veggies. spinkle red pepper and more parmesan if needed.
