Indian Dinner Stew

"This is a great stew-like Indian recipe. The garam masala seasoning gives it a great traditional taste!"
Ingredients:
2 cups chopped potatoes
2 cups chopped carrots
2 cups chopped cauliflower
2 cups peas
2 cups chopped tomatoes
1 can coconut milk
4 cups vegetable broth
unsalted cashews
1 tablespoon garam masala spice
1/2 cup ketchup
salt to taste
Rice of your choice (brown, white, jasmine)
Directions:
1. Chop all the vegetables and set them aside.
2. In a large saucepan heat the vegetable broth and coconut milk until it comes to a boil and put the potatoes and carrots in the saucepan. Let boil for 5 minutes.
3. Add remaining vegetables and simmer for 10 minutes.
4. Add ketchup and masala spice and simmer for 20-30 minutes or until all vegetables are soft but not mushy.
5. Turn of heat and add salt to taste and top with unsalted cashews.
6. Serve over rice and enjoy!
