Arabic Ma'aloobeh

"This Arabic Ma'aloobeh recipe is a a favorite arabic dish that is vegan and is made with rice, potatoes, and cauliflower. Ma'aloobeh is always a crowd-pleaser. My brother-in-law served Ma'aloobeh as a special in his Arabic restaurant using this recipe. It always attracted a huge crowd."

Ingredients:
4 Tablespoons olive oil
2 potatoes, sliced
1/2 head cauliflower, chopped
1 3/4 cups rice
3 cups vegetable or imitation beef broth
2 T. allspice
1/4 tsp nutmeg
1/2 cup pinenuts
plain yogurt (or tofu yogurt)

Directions:
1. Cook the rice with the allspice, nutmeg, and broth. This is easiest to do in your rice cooker.

2. In a frying pan heat 3 Tablespoons olive oil over medium-high heat, add potatoes and cauliflower and cook until soft and slightly charred.

3. Fry pinenuts in remaining tablespoon of olive oil until golden. Layer rice on top of vegetables and flip onto a platter. Top with pinenuts and yogurt.

Note: Ma'aloobeh and many other arabic dishes are usually served with plain yogurt on top to add flavor. (We like to use tofu yogurt which is fairly easy to make. A Tofu Yogurt recipe is also listed on this site.)
