Vegan Creamy Whipped Topping

"This is a healthful soy-based alternative to whipped cream."
Ingredients:
1 cup drained and blotted soft silken tofu
2 tablesppons confectioners' sugar or 1/4 cup sugar syrup* or natural liquid sweetener
1 tablespoon safflower or other neutral-tasting oil
1 teaspoon pure vanilla extract
1/4 teaspoon fresh lemon juice
Directions:
1. Place the tofu, confectioners' sugar, oil, vanilla, and lemon juice in a blender or food processor and process until smooth and creamy.
2. Transfer to a small container, cover, and refrigerate for 30 minutes before serving. This topping should be used within a few hours after making it.
* Sugar Syrup
combine 1/4 cup of sugar or other granular sweetener with 1/4 cup water in a small saucepan over medium heat and bring to a boil. Reduce the heat to low and cook, stirring, until the sugar is dissolved, about 1 minute. Remove from the heat and allow to cool before using. If you're not using sugar, use a light-tasting natural sweetener so it doesn't overpower the flavor of the topping.
