Bamia (Okra Stew)

"A delicious Vegetarian version of a traditional arabic meal!"

Ingredients:
24 oz. frozen okra, defrosted and liquid drained
1/4 cup olive oil
2 heads garlic, peeled and chopped
2 6 oz cans tomato paste
10 cups Vegetable broth
2 T allspice
dash of nutmeg
salt to taste

Directions:
1. Fry okra in olive oil in large skillet until browned.

2. Meanwhile, Place vegetable broth, garlic and spices in a large pot and bring to a boil.

3. Add tomato paste and mix well.

4. Add fried okra.

5. Boil over medium-high heat for about an hour, or until sauce is thickened, stirring occasionally.

6. Serve over rice.
