Vegan Potato Soup

"Yummy vegan potato soup!"

Ingredients:
1/2 Onion
4 Cloves Garlic
4 Cups Water
2 Vegetable Boullion Cubes
3 Cups Potatoes, cubed
1 Cup Tofutti Sour Cream
Pinch of Dill (Fresh or Dried) - Optional

Directions:
1. Saute Onion and Garlic until Onions are translucent.

2. Add water and Vegetable Cubes. Stir until cubes are dissolved.

3. Add Potatoes and boil until soft.

4. Blend the whole soup mixture in a food processor and add Tofutti Sour Cream. Stir. Reheat if needed.

5. If desired, add Dill.
